Beef and Lamb Recipes
Chicken, Steak or Shrimp Kabobs
Kabobs are something the whole Family will enjoy!
Make up any of our vinaigrettes for seasoning
Cut up Meat and place it in Zip lock bag
Cut up Onion, green peppers, squash, zucchini , mushrooms Any veggies are fine and place them in the bag
Pour the Vinagrette of choice over the meat and veggies
Marinate for a couple hours

Shredded Beef BBQ
This is an easy way to make BBQ Beef at home. It is cooked in a crock pot, so you don’t have to spend hours at home preparing it. Make your favorite BBQ sides to go with it, such as coleslaw, collards or green beans.
Ingredients:
2 – 3 lb
1 bulb of garlic, minced
Sea Salt
Water
Your favorite BBQ sauce (check for high fructose corn syrup, artificial flavors and preservatives on your sauce) Place meat in crock pot. Cover the top of it with minced garlic and a sprinkle of sea salt. Fill pot with water, so meat is half way covered. Cook on low for about 6-8 hours. When the meat shreds easily with a fork, it is done. Drain all liquid from crock pot and shred meat. Cover meat with BBQ sauce and leave on warm until ready to serve.
Prep Time: 10-15 minutes
Cook Time: 6-8 hours
Makes 6-8 servings
Spicy Beef Turnovers
These are similar to empanada, but use pizza dough instead of puff pastry. Add a side of Pico de Gallo or salsa for dipping. You can eat this as a meal or serve them as tasty snack at a party.
Ingredients:
1 lb ground beef
2 cloves of garlic, minced
2 tbsp tamari
1 tbsp water
½ tsp cornstarch
1 tsp ground cumin
1 tsp ground paprika
1 tsp sea salt
½ tsp coriander
¼ tsp red pepper flakes
2 tbsp green onion, finely sliced
Pizza Dough (enough for one pizza) – make it or buy pre-made dough
1-2 tbsp safflower oil
Preheat oven to 400˚F. Cook meat in medium skillet with the garlic. Remove meat from heat once it is browned and spoon off extra fat. Blend tamari, water and cornstarch in cup until smooth. Add mixture along with cumin, paprika, sea salt, coriander and red pepper flakes to skillet. Cook and stir for 30 seconds, until liquid is absorbed. Stir in green onions. Roll out dough until it is ¼ inch thick and cut out 4-inch rounds. Spoon heaping tablespoon of beef mixture onto one side and fold dough over. Pinch edges together to seal. Arrange turnovers on a greased baking sheet. Brush safflower oil lightly over turnovers. Bake 9 – 10 minutes until golden brown. Serve warm or at room temperature.
Prep time: 25-30 minutes
Makes 12-16 turnovers
Sheppard's Pie
This is a meal in a dish. It is both delicious and satisfying. You can add some steamed greens as a side or a salad to make it a well balanced meal.
Ingredients:
Mashed Potatoes
4-5 medium size potatoes, peeled
Water
¼ cup Earth Balance buttery spread
Sea salt and ground pepper to taste
Put potatoes in a medium sauce pan and cover with water. Sprinkle a little sea salt in and boil potatoes until you can pierce them with a fork easily. Once the potatoes are soft, pour out most of the water, saving it in a container; leave about ½ an inch in the pot with the potatoes. Add the Earth Balance and sea salt and pepper. Use a mixer to mix potatoes. If they seem a little dry as you start to mix them, add more of the saved potato water. Mix until potatoes are smooth.
Meat Filling
1 tbsp of olive oil
1 medium onion, chopped
2 carrots, peeled and diced
2 cloves of garlic, minced
1 ¼ lbs of hormone free ground beef
1 tsp sea salt
½ tsp fresh ground pepper
1-2 tbsp of flour
1 cup of chicken stock
2 tsp of tomato paste
1 tsp of tamari
½ tsp dried thyme
½ cup frozen or fresh corn
½ cup frozen or fresh peas
Heat olive oil in large sauté pan over medium heat. Add onion and carrots and sauté until soft. Add garlic and sauté a minute more. Push onion, carrot and garlic mixture to the sides of the pan and add the ground beef, salt and pepper. Brown the meat and then mix all the contents together again. Sprinkle flour over and cook it in for a minute or two. In a small bowl, combine the chicken stock, tomato paste, tamari and thyme. Pour it into the pan with the meat. Bring to a boil and then let simmer on low for about 5 minutes (until the sauce thickens). Then add the corn and peas. Simmer for 2 more minutes.
Pies
Preheat oven to 400˚
Scoop meat mixture into four, 2 cup Pyrex bowls. Smooth mashed potatoes over the top of each bowl. Bake for 25 minutes. Cool for 15 minutes and serve. You can put the meat filling into bowls with potatoes on top and refrigerate and bake later.

Baba’s Beef Vegetable Soup
This is a recipe from Steve’s grandma. We simplified it by using the crock pot. It is a delicious and hearty soup, perfect on those fall and winter days.
Ingredients:
3 – 5lb chuck roast (don’t use meat that is too lean; beef with the bone in it is best)
2 medium to large carrots, chopped
2 ribs of celery, chopped
2 cups of tomato juice
1lb bag of green beans, rinsed and tips snapped off
1 red pepper, seeded and chopped
½ cup of frozen corn
½ cup of peas
1 tsp sea salt
Sea salt and pepper to taste
Sear beef on all sides and place in crock pot. Put all the vegetables (except corn and peas) around the beef and pour in the juice and salt. Cover pot and cook on low for 3 hours, add peas and corn. Cook for 1-2 hours more. When the meat is tender and shreds with a fork, it is done. Season to taste and serve.
Prep time: 25 minutes
Cook time: 4-6 hours
